Thick banana pancakes

Today I made banana pancakes that worked super well. The first batch I used self raising flour and it turned out amazing! Cakey, soft and thiccc. Unfortunately, I'm diabetic so I tried to make it even more diabetic friendly by using oat flour and baking soda. The results are just as amazing and probably better!  Here's the recipe with replacement flour if you want to make it diabetic friendly.  Ingredients: 1 large banana 1 egg 1/2 yoghurt of choice  1 cup self raising flour (or oat flour with 1 TSP of baking powder) Method: 1. You can use your hands by mashing banana and mix the egg and yoghurt, once all the wet mixture smooth and combined, add the flour. Or just put everything in the blender until everything is well mixed. The batter should be thick.  2. Pan fry on the lowest heat. Make sure your pan is hot before putting on the batter.
