Blueberry friand

 Friands are the ultimate cake. I remember in high school admiring this delicious little morsel. When I used to work at McDonalds, these were the crème de la crème of the cakes they have there. Maybe I’m exaggerating but I’ve been wanting to make friands for the longest time, and I even bought the pan years ago for such a time as this. 

Well, today I finally conquered that fear and found that these are so easy to make!

So here’s the recipe I used and it was from taste.com and I’ve put in my alterations. It was the simplest and without egg wastage. Most of the recipes require only egg whites, whereas this one use the whole eggs. 



Ingredients 

  • Melted butter, to grease
  • Plain flour, to dust
  • 195g (1 1/2 cups) caster sugar
  • 75g (1/2 cup) plain flour, sifted
  • 155g (1 1/2 cups) almond meal
  • 3 eggs, lightly whisked
  • 180g unsalted butter, melted, cooled
  • 100g frozen blueberries

    • Step 1
      Preheat oven to 180°C. Brush your friand pan with melted butter. Dust with plain flour.
    • Step 2
      Combine the sugarflour and almond meal in a bowl. Make a well in the centre. Add egg and butter. Stir until well combined.
    • Step 3
      Divide among the prepared pans. Divide the blueberries among the centres.
    • Step 4
      Bake for 30 minutes or until light golden. Set aside in the pans for 5 minutes to cool slightly before transferring to wire racks to cool completely.
