Fig in syrup cake
I love cake and I'm always on the search for unique cakes recipes that are easy to make. I happened to have a jar of fig in syrup in my pantry and I think its time to make this.
I googled some recipes online and apparently it's a common traditional ingredient for a popular dessert in America. This recipe I used was inspired by this website https://louisianacookin.com/fig-gateau-de-sirop/
It's not as dark as the original recipe because I took out 1 cup of syrup. I also replaced white with wholemeal flour. The result is this delicious, not so sweet and very moist cake. Strangely enough, it has a hint of apples (without the apples) to it.
Ingredients
1 (20-ounce) jar fresh figs in heavy syrup
2 large eggs, beaten
¾ cup buttermilk
½ cup vegetable oil
⅓ cup sugar
1 teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon grated nutmeg
2 ½ cups wholemeal flour
1 teaspoon baking soda
Fig preserves
Instructions
Preheat oven 350°. In a food processor combine figs (syrup and all), eggs, buttermilk, oil, sugar, salt, cinnamon, and nutmeg blending well.
Put in flour and baking soda and blend for 5 seconds. Pour into a greased tube pan.
3. Bake about 1 hour or until a wooden pick inserted near the center of the cake comes out clean. Let cool completely in pan. Invert onto a cake plate.
